Maca Munchies -- Grain-Free -- Protein Rich -- Cinnamon Maca Super Cereal ❤

Good Morning ! I've been sitting with this recipe for awhile waiting for all the ingredients to come together just right. The recipe itself is about as easy as making cookies!
I'm loving having this cereal around for breakfast or as a quick snack to grab by the handful on the go. I used to make it in a simpler form for one of my clients as a replacement for cinnamon toast crunch cereal. I wanted to add more nutrition so I decided to include Essential Living Foods', Maca Blend which uses Maca Premium (potent form of maca), and Corgy­Gen: an extract of a mushroom known as Cordyceps that enhances libido, stamina, alertness, and energy levels. Ashwagandha to help soothe the nervous system while helping with digestion, stress relief, mental agility, and focus. Lastly, Some Grass Fed Gelatin for extra protein and amino acids. SO yeah...it evolved into a SUPER CEREAL! 




Ingredients:
1 Cup of Almond Flour
1/4 cup of Coconut Flour
3/4 cup of Unsweetened Shredded Coconut (if you want a sweet cereal you can replace the coconut shreds with coconut sugar)
1/4 teaspoon of Salt
1.5 tablespoons of Cinnamon
1.5 tablespoons of Maca Blend by Essential Living Foods: http://essentiallivingfoods.com/collections/superfood-smoothie-blends/products/maca-blend

3 large Egg White
2 tablespoons of Coconut Oil

Instructions:
1. Preheat Oven to 450 degrees.
2. Place all dry ingredients into a large bowl and mix well.
3. Add all wet ingredients and mix with hands until it forms a cookie dough like texture
4. Place the dough between two pieces of parchment paper and roll out until it's very thin (1/16 of an inch)*.
5. Cut dough length wise, then width wise to form small squares. Wiping knife frequently to avoid dough catching and tearing.
6. Bake in the oven for 4 minutes.
7. They will not be crunchy when they come out of the oven.
8. Allow to cool completely on oven tray.
9. Store in an airtight container in the fridge.

*if you like yours a little thicker like I do - extend the baking time by 1/2 but watch closely as they burn quickly.
