Grain-Free Goji Berry Granola
This is one of our favorite things to snack on & have for cereal in the morning w/ Freshly made Pumpkin Seed Milk!
What you need:
1/2 cup of Raw Pumpkin Seeds
3/4 cup of Finely Chopped Brazil Nuts (can sub w/ Sunflower Seeds)
1/2 cup of Goji Berries
1/4 cup of Coconut Shreds (unsweetened)
1/4 cup of Maple Syrup
1 teaspoon of vanilla
1/2 teaspoon of cinnamon
What to do:
1. Preheat oven to 350 degrees.
2. Mix all ingredients in a small bowl, except the Goji Berries.
3. Spread the mixture evenly on-top of a lined baking sheet.
3. Place in the oven and bake for 10 minutes.
4. Add Goji Berries and Bake for an additional 10-15 minutes, until mixture is starting to brown.
5. Remove from oven and allow to cool completely before breaking into smaller pieces and storing.
