Raw Vegan Noodle Bowls




This recipe is very simple to make, super creamy and filling, wonderful for a meatless craving! If you don't have a spiralizer, I highly recommend getting one .  If you have a kitchen aide stand up mixer the spiral attachment is absolutely worth the buy.  Otherwise you can add a handheld one to your kitchen repertoire.

Ingredients:
6oz of coconut water
2 cups of raw cashews, soaked overnight or for 10 minutes in boiling water
1 garlic clove
1/2 of a medium sized avocado
1 teaspoon of curry powder
1 teaspoon of red chili paste 
1/2 teaspoon of sea salt
2 medium yellow squashes
2 medium zucchini’s
1 red bell pepper
pinch of cayenne
toppings: cilantro sprouts (optional) and sprinkle with curry powder

Instructions:
Wash zucchinis and squash, chop off the ends. 
Spiralize using the C-blade on your kitchen aide (the one that makes spaghetti-sized noodles).*
Place the zucchini and squash in a large strainer and place in the sink. 
Coat the Zucchini in salt and allow the water from the zucchini to drain.
Cut red pepper in long thin slices. In a high-speed blender, combine all other ingredients blend on high until the sauce becomes smooth and thick. Make sure the water is drained from the zucchini noodles before coating them in the sauce! Toss noodles with sauce in a large bowl until thoroughly coated. Serve and enjoy.

*if you don't have a spiralizer, you can use a potato peeler, cutting in long thin strokes
