Crispy Plantain Chips with Guacamole! Grain Free, Paleo and AIP Friendly!
These plantain chips are fun to make and pretty simple! The flavor is mild and so different then a traditional tortilla chip. No grains, no genetically modified corn, no hydrogenated oils and really easy on your digestive system! Enjoy, with love, Christina 💖
Ingredients for the chips:
2 green plantains
1 cup of coconut oil for frying
1 teaspoon of salt
¼ teaspoon of chili powder
1 teaspoon of salt
¼ teaspoon of chili powder
Ingredients for the guacamole:
1 ripe avocado
½ lime, juiced
½ teaspoon of salt
Instructions for the chips: Open plantain and slice in long thin strips. Heat coconut oil until smoking. Fry until the chips get a golden color, remove from heat and place on paper towels to cool. Make guacamole while they cool. Instructions for the guacamole. Place all ingredients in a bowl and mash with a fork until fully combined. Once plantain chips are cooled Sprinkle with salt and chili powder.
