Instant Pot Quinoa Breakfast Cereal

A regular in our home, more protein rich than traditional oats and it tastes better too.  Serves Two

Ingredients:

1/2 cup of organic quinoa, rinsed well 

1 cup of water 

1/2 cup of almond milk

1 apple, cored, peeled and grated 

1 tablespoon of coconut oil 

1/2 cup almonds, chopped 

drizzle of olive oil 

pinch of salt 

pinch of cinnamon 

1 teaspoon of stevia, lakanto, truvia or swerve (optional)

extra almond milk for serving 


Instructions: 

Rinse quinoa and soak while prepping the apple.

De-core, peel and grate the apple with a cheese grater or food processor.

Drain the quinoa and add it to the InstaPot with the water, almond milk, grated apple and coconut oil.

Place the lid on, turn and lock the lid, press the pressure cooker button and turn the timer to 1 min.

Allow the pressure cooker to build the pressure and cook for 1 min.

Once the timer beeps for 1 minute allow the pressure to slowly release naturally for 10 minutes. 

While the pressure releases for 10 minutes prepare the almonds. 

Set the broiler in the oven on low.

Roughly chop the almonds, drizzle with olive oil, pinch of salt and place under the broiler.

Toast for 3 minutes and remove from the oven.

Place 1/2 a serving in each bowl, sprinkle with almonds, pinch of cinnamon and stevia if desired.

Serve with almond milk.
