Holiday Truffles

Hello, posting a recipe today was a challenge and an impossibility over the last few days with the constant negativity in our world right now, finding positivity and neutrality is where we all win.  Sharing some holiday love with everyone in the midst of it all!  I love making these truffles, creating this recipe came from a place of joy, fun, love and devotion!  I hope the feelings shine through...with love, Christina xo
















4 cups of cacao paste, melted and divided in 1/2 
1 cup butter, melted 
2 cups of swerve, divided
1/4 cup of whipping cream
1/3 cup of olive oil
2/3 cup of water
1 teaspoon of whisky or brandy
1/8 teaspoon of salt
1/4 cup of collagen powder
1/4 cup of sprinkles or natural alternative, I used dehydrated strawberry powder
take: 1 8oz bag of freeze dried strawberries or other freeze dried fruit and place in the food processor or blender and pulse until the berries turn into a fine powder.  Careful not to blend too long or the powder will get sticky.

Instructions:
Melt the cacao paste, butter and half of the swerve until fully combined, divide into two separate bowls evenly.  One bowl will be used for the center filling and the other for the chocolate coating.  Add the whipping cream, olive oil, water, whisky/brandy, salt, collagen powder and swerve. Mix with a spatula until fully incorporated.  Cover and place in the fridge for 2 hours until thickened.  You can make the the sprinkles now and set them aside or you can wait until you are ready to roll the truffles, either way make sure they are ready once the outer coating is melted because you want them to stick to the melted coating and it cools fast!  Once the center has thickened and cooled in the fridge (about 2 hours but you can leave longer).  Place a large baking tray covered in parchment paper and place near your work station for the finished truffles. Take about 2 tablespoons of the center filling, roll into a ball with your hands, dip into the chocolate coating and sprinkle with sprinkles or frozen dried fruit powder and place on the parchment lined baking tray to set.  Place in the fridge until the outer coating is hardened, about 30 minutes.
