Siracha Cauliflower Bites


Ingredients
  • 1 head cauliflower; chopped smaller - bite size pieces
  • 1 cup of brown or white rice flour / almond or hazelnut meal (for grain free)
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of smokey paprika
  • pinch of fresh black pepper
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of dried basil
  • 1/2 teaspoon of dried oregano
  • 2  organic eggs
  • Parchment Paper

Sauce


  • 1 tsp. Coconut Oil or Butter; melted
  • 1 cup of Sriracha or Frank's Red Hot Sauce 

Instructions
  1. Preheat oven to 450F.
  2. In a small bowl, combine all dry ingredients. Mix thoroughly with a whisk.
  3. In a separate bowl whisk together the eggs.
  4. Dip cauliflower pieces in the egg mixture until coated evenly, then place in the bowl with the dry ingredients, covering completely. 
  5. Place on parchment paper lined baking sheet.
  6. Bake for about 20 minutes or until the batter hardens.
  7. Whisk together siracha and the coconut oil or butter in a small bowl.
  8. When the cauliflower is finished, remove from the oven and dip in siracha mixture until cauliflower is fully covered.
  9. Bake coated cauliflower for an additional 10 minutes, or until cauliflower is crispy, and sauce looks absorbed.
  10. Remove from oven.
  11. Let cauliflower bites set out for at least 20 minutes before serving.
