Quinoa Burgers

These quinoa burgers are soooooo good on top of salads, in between buns or just as a snack on their own!





2 cups of quinoa
3 cups of bone broth
3 carrots - shredded
3 stalks of celery - thinly sliced
2 cloves of garlic
1 medium sized onion
1/4 cup parsley, chopped
1 tablespoon of coconut oil
3 eggs, beaten
1 cup of coconut flour
2 teaspoons of salt
pinch of black pepper
1/2 tablespoon of Curry Powder

1. Cook 2 cups of quinoa with 3 cups of broth
2. Sautee' onion in 1 tablespoon of coconut oil in a separate pan
3. Add carrot, celery, garlic, onion and parsley
4. Cover and cook for 5 minutes
5. Add cooked quinoa, salt and curry
7. Add eggs, coconut flour and mix with wooden spoon
8. When cool form into patties
9.  Sautee' burgers in just enough coconut oil so they do not stick to the pan
10. Drain on paper towels and serve
